our unique process
Our oysters are grown by hand. This is an advantage because it gives us more control over their environment and allows us to create the most optimal conditions for their growth.
Oysters are one of the few seafoods that thrive in a farm raised environment. Farm raised oysters are grown in gear with pontoons that keep them floating at the top of the water column. This allows them to filter cleaner and more nutritious water than traditionally harvested oysters, which produces an appealing flavor profile.
Step 1
As farmers, we sort, clean and desiccate the oysters on a routine basis. In addition to the natural wave action that takes place in the bay, oyster farmers also tumble their oysters to define their shape and deepen their cup which produces a desirable meat to shell ratio in each oyster.
Step 2
Texas regulations require a farmed oyster to be 2.5 inches from tip to hinge before it can be harvested. Flourishing in the warm Texas water, oysters are typically on the farm less than a year. We are GO TEXAN certified, meaning we are Texas made and Texas proud!

Our oysters are farm-raised in floating cages in the nutrient-rich waters of Copano Bay, Texas. We carefully manage their growth from seed to harvest, ensuring they develop a deep cup, smooth texture, and premium flavor. Unlike wild oysters, which grow unpredictably on the bay floor, our oysters stay at the top of the water column and are regularly tumbled by natural wave action, strengthening their shells and enhancing their shape.

Our farm is located in the Mission-Aransas Estuary, where the Mission River’s freshwater meets the saltwater of Copano Bay, creating a perfect brackish balance. With a salinity around 15 ppt, our oysters develop a faint brine and a rich, creamy finish. The farm’s 10-foot depth and persistent southeast winds create natural tumbling, producing Copano Cream oysters with beautifully shaped, strong shells and deep cups.
One of the biggest advantages of our location is its remoteness—surrounded by undeveloped land and free from heavy human activity, our waters stay pristine and clean. This untouched environment allows our oysters to thrive in some of the purest waters on the Texas coast. We are GO TEXAN certified, meaning we are Texas made and Texas proud!

Yes! Oyster farming is one of the most sustainable forms of aquaculture. Our oysters live in their natural environment, aren't fed or fertilized and naturally filter the water, improving local water quality and supporting marine ecosystems. Unlike traditional wild harvesting, farm-raised oysters don’t deplete wild populations, making them an eco-friendly seafood choice.

Thanks to our farm’s controlled environment, Copano Cream oysters are available year-round. Also, all harvested oysters are heavily regulated by the health department to ensure they are safe to eat even in the summer months. Our slogan says it best:
